Milk is the main ingredient in our cheeses in Ireland and here we have lush green pastures fed from rich soils, warmed by the passing Gulf Stream and watered by our famous rain. These are the factors that ensure Ireland produces milk of distinction. Our dairy herds spend spring, summer, autumn and a lot of the winter on these pastures and while they are indoors for a few short weeks, they enjoy the best of grass feed.

From the heart of Tipperary, where the pastures are rich and moist come some of Ireland's finest cheeses. Amongst these, the fourth generation of the Maher family work their farm and with the milk from their friesian dairy herd, produce some of Ireland's best known Farmhouse cheeses. Their cheeses offer the complex world of international retailing and food service simple products, which appeal to today's consumer. Combining creativity and innovation with respect for traditional craft and simplicity, the cheese makers of Cooleeney are at the forefront of a new and diverse food culture.

Cooleeney Farmhouse Cheese operates a comprehensive HACCP system. Their custom designed cheese plant is accredited to the BRC Global Standard. Each staff member is trained under the guidelines set out by the FSAI. Comprehensive microbiological testing is carried out continuously by an INAB accredited laboratory off site, thus ensuring that all cheeses leaving the plant with optimum quality and safety.
